The Woodinville Bourbon Cloud Cocktail

The Bourbon Cloud from Chad, Woodinville’s Brand Ambassador in Oregon and Northern California, features another flavorful, flexible simple syrup… this time, with bay leaves.
Bourbon Cloud:
1.5 oz. Woodinville Bourbon
.5 oz. Montreuil Calvados Reserve
.75 oz. Lemon Juice
.75 oz. Bay Syrup
1 dash Scrappy’s Cardamom Bitters
1 egg white
Garnish with 3 floated Cardamom Pods
Bay Syrup:
15 bay leaves
½ cup sugar
½ cup water
-Combine all three ingredients in a pot and bring to a simmer on low heat while stirring to dissolve sugar and prevent scorching.
-Once simmering remove from heat and allow to sit at room temperature for at least two hours
-Strain out solids
